Description: |
The Executive Pastry Chef oversees all food production in the pastry shop and ensues that all associates are performing their duties above the standard. Develops new dessert menus for banquets as well as input on the rest of the resort outlets.

Duties: |
Responsible for overseeing the entire production of pastries, breads, sweets, ice cream, fillings and toppings, including their design, creation, execution and presentation.
Creates items that feature fresh, seasonally appropriate ingredients.
Responsible for creating innovative desserts that not only taste delicious but also pair well with items on the existing food and wine menus.
Supervises and manages the entire pastry staff.
Ensure the recipes that have been created are being executed correctly, and ensure quality control measures are being adhered to daily.
Responsible for managing the labor costs of the pastry station or department; determining how many staff members are needed for each shift; and adjusting this number according to demand and profitability.
Create and plan menu items with the highest quality ingredients while keeping costs within the budgetary restrictions.
Orders inventory for the items that are included in the daily production.
Stay current with techniques, preparations, ingredients and any other topics related to the area of desserts in the culinary industry.
Value ongoing education and professional development, including workshops, seminars, classes, meetings.
Be involved within the community, fostera relationship with the community that surrounds the establishment.
Scheduling of pastry associates.
Keep pastry shop organized, clean, updated, and keep sanitation high.

Qualifications: |
Degree from post secondary culinary arts training program desirable.
A minimum of five years in pastry field. Ability to decorate show pieces for buffets desirable.
Have the desire to teach and grow with associates.
Must be able to speak English.
Must be able to work weekends, holidays, and be flexible with shifts |
